Information

813 - Kiwi Brand 8" Chinese cleaver knife with a wooden handle.

The 813 Kiwi Brand eight inch cleaver knife has a wide cleaver style blade with a 2mm thick thick spine.

Cleaver knives (sometimes referred to a chopper) are a lighter weight class of "cleavers" and while they can still be used for cutting and slicing meat they are not suitable for cutting though bones.

They are a general purpose knife that is best suited to jobs like preparing vegetables, and herbs and able to perform all slicing, chopping, and mincing with ease.  Their wide blade design also makes them a convenient tool to use when transferring ingredients from the cutting board to the wok or other cooking pot.

Known globally by their reputation as the best knives that Thailand has to offer, Kiwi Brand and Kom-Kom knives are both attractive and practically suited for everyday use.

The blade is made from SUS420J2 Japanese Martensitic stainless steel, which is a high carbon stainless steel alloy that is specially heat treated and tempered which ensures sharpness and unrivalled durability and it has an ironwood hardwood handle which is attractive and hard-wearing.

Great knife for veggie prep

We don't eat meat, so whilst a cleaver might seem like overkill, this knife actually makes veg prep a lot easier. For example, the huge blade is great for using sideways to crush garlic, then the blade can remove and chop it up v rapidly. The blade is sharp and I have heard great things about the longevity of Kiwi knives so I think it will hold for some time. The knife feels like top quality, and I went for the wood handle for aesthetics. Don't really want it to go through the dishwasher anyway. Fab!
